Brown Sugar & Garlic Chicken

Vow to myself…try to use the slow cooker more.  Yes, it does take some planning, but it is soooooo easy and makes the week nights so much more productive for other things…like looking for more recipes to try out.  hehehe 
But really, I don’t know that I have had a slow cooker recipe not turn out and this one is no different.  The chicken is soft and falls off your fork, the sauce reduced down blends the rice and chicken together.  Now, all I really need is a side dish…like a light salad to balance out the rich and smooth chicken and rice.

Brown Sugar & Garlic Chicken


Ingredients:

  • 4-6 chicken breast or thighs (appox 2 lbs), you can use fresh or frozen
  • 1 cup packed brown sugar
  • 1/3 cup apple cider vinegar
  • 1/4 cup lemon lime soda
  • 3 Tbls minced garlic
  • 2 Tbls soy sauce
  • 2 Tbls corn starch
  • 2 Tbls water
  • 1 tsp fresh ground pepper
  • 1-2 cups rice (cook to package instructions)

Preparation:

  • Place chicken in slow cooker.  Combine all other ingredients in a bowl and whisk till sugar and corn starch are dissolved.  Pour over chicken.
  • Cook on low for 7-8 hours.
  • To serve, begin cooking rice to package instructions.
  • While rice is cooking, remove chicken from slow cooker, tent and set aside.  Pour sauce into a pan on the stove top and bring to a light simmer for a few minutes while rice is cooking.  Remove from heat and pour sauce through strainer to get rid of garlic and small pieces of chicken.
  • Serve chicken over rice with the Garlic Brown Sugar sauce.  Enjoy!!!
