Breakfasts on the weekend can be a great time to create something new and fun. I cannot take credit for this dish since the significant other had reign of the kitchen on this particular morning.
What to have for breakfast? No particular dish was planned, but what he knew is that we had eggs, puff pastry and left over crab dip from a family get together the night before. That is how this breakfast came to be. Very similar to Eggs Benedict that there was the dough, the cooked egg and some sort of sauce which included a meat. I don’t have the recipe for the crap dip, but any creamy recipe would work. You could even substitute a hollandaise or bechamel sauce…or really anything you would like.
Mediterranean Spiced Eggs with Puff Pastry
Ingredients:
- 1 tube crescent roll dough
- 4 eggs
- Melted butter
- Mediterranean spice blend (or Herbes de Provance – for the french touch)
- Crap dip or sauce
- Fresh chives or scallions, diced
Preparation:
- Preheat oven to 350 degrees. Lay parchment paper on a sheet pan.
- Roll out 2 of the crescent rolls together to form a rectangle and push down slightly in the center (the egg will go there).
- Brush the rolls with melted butter and sprinkle will a healthy helping of the spice mixture. Remove from oven and crack an egg in the center of each roll. Place in the oven and bake for approx 20-25 minutes, until pastry is golden brown and egg is cooked to your liking.
- While egg is cooking, heat your crab dip or hollandaise sauce to pour over. Garnish with chopped scallion or chives.
