Easy Homemade Pancakes

Saturday & Sunday mornings are some of the best times in the world!  The sun is shining when you get up (only because you get to sleep in), the coffee is hot and open for whip cream topping (a luxury only reserved for weekends), and a fun time snuggling in bed or laughing over something funny seems endless. 

I had one of those mornings this Saturday, only to come down and find we were out of the trusty pancake mix.  In hindsight, I’m happy that we ran out because I found this recipe on ‘Cookpad’ (an app on my phone), made a few variations and added my own homemade simple syrup and that is what makes this Saturday morning amazing!


Easy Homemade Pancakes 
w/ Orange & Date Simple Syrup 


Ingredients:

  • 1 cup all purpose flour
  • 2 tsp sugar
  • 1 tsp baking powder
  • 3 1/2 cups melted butter
  • 1 egg
  • 3/4 cup milk
  • 2 tsp vinegar
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • sprinkle cardamom
  • 1/2 cup sugar
  • 1/2 cup water
  • 3 Tbls milk
  • Zest of one small orange
  • 1/4 cup dried dates
  • 2 tsp honey

Preparation:
  • Heat a non-stick skillet over medium heat.  Combine flour, 2 tsp sugar, baking powder, butter, egg, milk, vinegar, vanilla, almond and cardamom and stir together.  If mixture is too thick, add a little more milk.
  • While making the pancakes are cooking, heat 1/2 cup sugar and water to a rolling simmer in a sauce pan.  When it is at a strong simmer, slowly stir in the milk, one Tbls at a time.  When boiling, zest orange over sauce pan and add dates and honey.  Let mixture continue to boil until it becomes thicker – just watch that it doesn’t boil over.  
  • Serve pancakes with a pat of butter and drizzle simple syrup over the top.  It is great with a side of bacon.
