Nothing could be easier than throwing a few ingredients into the slow cooker and coming back hours later to the perfect appetizer of BBQ Bellini Meatballs. You don’t need to be an expert chef to create this crowd pleaser. This appetizer came about because there
was an event as my part time job that they asked me to create a menu for using some of the food items in their inventory. And that is the reason that everything is going to look presented like at a professional function, because, hey…they were!
The preparation couldn’t be much easier when you use a slow cooker, but there are two bits of advise on this dish that can make all the difference. First, find the kind of frozen meatball that is your favorite. Different brands have different textures, some softer and smooshier (is that a word?) than others. Me, I prefer when the meatball not only holds it’s shape, but is solid when you bite into it. And second, make this as a slow cooker recipe and allow all the flavors to meld together. You can try it on the stove top, but that doesn’t allow for the jam and sauce to really work their way into the meatballs. The slow cooking part is what really develops the flavor.
BBQ Bellini Meatballs
Ingredients:
- 1 1/2 lb of frozen meatballs (give or take a 1/2 pound)
- 12 oz Bellini Jam
- 10 oz BBQ Sauce
- Chopped Fresh Parsley to Garnish, Optional
Preparation:
- Combine meatballs, bellini jam & BBQ Sauce in slow cooker and stir together.
- Cook on low for 7-8 hours or on high for 3-4 hours.
- Serve as you wish (toothpicks are fun) and garnish with parsley if you would like.
