This recipe is more about the sauce than the cod. There isn’t anything special to say about the seasoning on the cod, but the brush of canola oil and sprinkling of salt and pepper. The winner of this is the sauce.

This citrus browned butter sauce is fantastic with the richness of the browned butter, the sugary sweetness of the caramelized shallots and the freshness of the citrus. I could easily see using this on chicken or pork, as well as the fish. It was inspired by watching Bobby Flay on a Saturday morning and I can’t tell you how easy it was since I didn’t even need a grocery list to remember the ingredients.

It was an impromptu date night for E and I and we had the forever struggle that we always have…Should we go out to eat? Or should we cook? The reason that this is always a struggle is because of the expense of going out. It can easily be an $80 dinner out somewhere that we are disappointed with and will leave us saying, “We could have made that at home better for less.”

Well, we made this at home and we were not for one minute wishing we had gone out to eat. Sided this cod with a fresh caprese, hummus, cheese and a cool Savignon Blanc. A great date night!

Grilled Cod with Citrus Browned Butter Sauce
Ingredients:
- 1 lb cod fillet, cut into two servings
- 8 Tbls butter, separated
- 1 large shallot, thinly sliced
- 2 large cloves garlic, minced
- Zest and juice of half of a lemon
- Zest and juice of half of an orange
- Salt & pepper
Preparation:
- Heat the grill to high heat. Prep the cod by brushing with canola oil on both sides and sprinkling with salt and pepper.
- In a skillet over medium heat, melt 4 Tbls of butter with salt and pepper until butter is browning and bringing out all of the nuttiness of the butter. Add the shallot and garlic and saute for about a minute before adding in other 4 Tbls of butter.
- When additional butter is browned, add the zest and juice of the citrus. You will smell all of the citrus at this point.
- On a clean grill, place fillets of cod on the hot grill. The thickness of the cod will dictate how much cook time is required. My cod was about 3/4″ to 1″ thick depending on which end. I cooked for about 3-4 minutes on first side until fish released from the grill. Then flipped over and cooked for another 3 minutes on the second side.
- When serving cod, top with browned butter sauce and enjoy!
