You may start to see a theme right now in the recipes that I am posting. That theme would be SPRING!!! It is time for every last bit of snow to be gone and the outdoors to be nice and warm. I want to sit on my patio with a glass of wine while my food is cooking on the grill. I have started to hear birds chirping in the morning, so I feel like we are on the right path, but temps in the 30’s (even if it is just first thing in the morning) have to go!
This was a fun recipe to make, that I am certain to make again this spring/summer. The combo of creamy avocado, sweet pineapple, fresh lime juice and heat from the jalapeno makes winning combo that goes great over seasoned grilled chicken breast. When I make this again, I want to see what else I could do with it – like turn it with some spinach and queso fresco for a nice salad, or maybe over grilled fish or maybe serve just as a stand alone salsa. Can you tell that I like this salsa?!
I don’t have any pics because I was feeding a very hungry bunch of people and the food disappeared quickly. I WILL be making this again and WILL take pictures to share. SO GOOD!!!
Pineapple Avocado Salsa
Ingredients:
- 2 cups diced pineapple
- 1 cup chopped cilantro
- 1 avocado, diced
- 1 jalapeno, seeded, finely chopped
- 1/2 cup diced red onion
- 2 Tbls lime juice
- 1/4 tsp salt
- 1/4 tsp ground cumin
- 1/8 tsp ground black pepper
Preparation:
- Combine all ingredients in a large bowl. Add salt and pepper to taste. Let sit for 5-10 minutes to let the flavors marry together. Serve any way you would like – over grilled chicken, fish or as a salsa itself.
