Fresh Green Pea Gazpacho

Gazpacho in essence is cold soup. Traditionally found made from tomatoes. I say, ‘step aside, tomato – here comes green peas!’

Nothing says spring like peas – add other items like mint and honeydew melon (and even a little heavy cream) and you have a light, but flavorful spring soup. Now, if the temps would just catch up with the season, we would all be a little happier.
