It was one of those weekends. You know the ones – when there are so many things to get done, when you have a few events to go to and then all of the house chores that have been put off during the week…now, to worry about dinner…No Thank You! I wanted something easy where we didn’t have to go to the store and get things – so, I raided the pantry and found this simple, sweet and tangy Shredded BBQ Chicken!
I have to say thank you to frozen chicken breasts, a jar of Sweet Baby Ray’s BBQ sauce and one lone orange hanging out in the produce drawer in my fridge. There were extra buns around thanks to the Sloppy Joe’s earlier in the week. This meal came together as easy as I said, ‘Hey Hon – could you put all of that in the slow cooker so I can get ready?!’
Ok, so it didn’t totally happen that way. But the dinner was done when the house was clean and we were ready to relax. Slow cookers can really save the day/evening meal planning. Really love those things!
Slow Cooker BBQ Chicken
- 3 Large chicken breasts – approx 1-2 lbs
- 1 1/2 cup of your favorite BBQ sauce
- Zest and juice of one orange
- Combine all ingredients in your slow cooker. Cook on low for 5-6 hours or on high for around 3 hours.
- Shred before serving.
- This is good served over rice as well.
